You're right, intermediate gives you 2 minutes of prep, versus 5 in amateur. Professional gives you zero prep time. You get paid more for higher difficulties, and paid less if you die (from insurance). Other than that, there's no difference. Ghosts aren't more or less aggressive or anything. Actually, they're easier to find on Professional bc they're more active from the start
